The simple recipe to Banana bread muffins by the amazing Meredith Rodriguez
Ingredients
• 1 banana
• 1 egg
• 1/2 cup coconut sugar
• 1/3 cup Greek yogurt
• 1/4 cup almond milk
• 1 tsp vanilla
• 1 tsp cinnamon
• 1 tsp baking powder
• 1 1/4 cup gf flour (I used oat)
• 1/2 cup chocolate chips
Instructions
Stage 1
In a large bowl smash your banana then add in your egg and mix well.
Stage 2
Once mixed, begin to add in sugar, Greek yogurt, almond milk, vanilla and combine
Stage 3
Lastly add in cinnamon, baking powder, flour and mix well
Optional add in chocolate chips
Stage 4
Line a muffin tin and pour batter until 3/4 full then bake on 350F for 35-40 minutes - finally, enjoy!
