Brownie Cookies (Chocolate Pillows)

The unique recipe to delicious brownie cookies, aka chocolate pillows by Renees Food

A note from the baker:

Brownie cookies. aka soft chocolate pillows that melt into rich fudginess in your mouth. perfect crackly top. did I mention it’s also super simple to make them? no, you’re not dreaming.


Ingredients

• 3/4 (~96g) cup flour

• 1/3 (~35g) cup cocoa powder

• 1/2 tsp baking soda

• Hefty pinch of salt

• 5 tbsp (~70g) softened butter (sub coconut oil)

• 1/3 cup maple syrup (sub honey, brown sugar, etc)

• 3 tbsp sugar

• Chocolate chips



Instructions

Stage 1

Mix all of the dry ingredients together in a bowl and in a separate one, mix the butter, syrup, & sugar. Stir well and then fold in chocolate chips


Stage 2

Either place the cookie dough into the fridge for approximately an hour, of freeze it for 15 minutes


Stage 3

Plop balls of dough onto a baking sheet, forming either 16 small or 8 larger (if you reduced the sugar, flatten them) & bake for 9-12 min (longer for larger cookies) at 350F / 180 C
