Eggless Mango Cake W/ White Choc ermine frosting

The amazing recipe to delicious eggless mango cake by Bake with Nari

Ingredients

Main Ingredients⁣⁣

• All purpose flour 150 gm

• Baking powder 1 teaspoon

• Baking Soda 1/2 teaspoon

• Butter melted 70 gm

• Sugar 2 tablespoon

• Mango puree 120 gm

• Milk 60 ml

• Mango essence 2 teaspoon

• Condensed milk 250 ml

For the frosting

• Milk 115 ml

• All Purpose Flour 5 tablespoon

• Vanilla 2 teaspoon

• Salt pinch

• Butter 1 cup

• White Chocolate 1+1/4 cup

• Sugar 1/4 cup


For the filling

• 2 large mangoes



Instructions

Stage 1

Pre heat oven to 175 degree c and line two 6 inches pan with butter paper and dust with flour. Combine mango and sugar in mixer and then sift the dry ingredients that is the all purpose flour, baking powder, baking soda.


Stage 2

Now combine the mango mixture with melted butter, condensed milk, mango essence and milk. Fold it in gently in the dry ingredients with a spatula. Pour batter into the two 6 inch tin. Tap slightly to even out the mixture. Bake at 175 degree c for 25 to 30 minutes until tooth pick comes out clean


Stage 3 - the frosting

Take a small saucepan and add flour and sugar in it . Add milk and place the pan on low heat until mixture heats up and sugar starts to dissolve. Add white chocolate and whisk until it melts completely and the mixture thickens and starts to bubble.


Remove from heat and stir in vanilla essence. Pour the mixture into a bowl and cover it with a plastic wrap against the top of the hot mixture. Keep it in the fridge to cool. Now take the butter out of the fridge. please make sure the butter is not melted or very cold.


In a large bowl whisk the butter until its light yellow and fluffy. Now add the mixture one tablespoon at a time to the butter beating it well till all the roux has been incorporated into the butter and the icing is fluffy . Add a pinch of salt and vanilla mix for 2 to 3 minutes. The icing is ready to use.


Stage 4

Cut your mango and remove the pulp from them. Take about 1/2 cup of mango and add it to the mixer until blended well. Now cut one of your cakes in half and spread it with the mango pulp that you have whisked in the mixer . Take the frosting and ice a circle around the cake and now add some more pulp in the centre keep building your layers like this and then frost the cake completely from outside.


Stage 5

To decorate Take a large star tip and fill it with frosting and pipe large stars around the cake, keeping some chopped mango in the centre. Fill another pipping bag with round tip and pipe round dots at the bottom of the cake. Your cake is ready - chill it in the fridge and enjoy!
