Fudgy Greek Yoghurt Brownies

Greek yoghurt brownies by the amazing Meredith Rodriguez

A note from the baker:

Back at it again with another brownie recipe this time made with Greek yogurt. These brownies are fudge and truly are so delicious!


Ingredients

Wet ingredients ⁣⁣

• 3/4 cup Greek yogurt ⁣⁣

• 1/2 cup coconut sugar (sub cane sugar)⁣⁣

• 2 eggs ⁣⁣

• 1/2 cup melted dark chocolate ⁣⁣

• 1 tsp vanilla extract⁣⁣

Dry ingredients ⁣⁣

• 1/4 cup wheat flour (sub oat or almond flour)⁣⁣

• 1/4 cup cocoa powder ⁣⁣

• 1 tsp baking powder ⁣⁣

• pinch of salt


Chocolate ganache ⁣⁣

• 1/2 cup dark chocolate ⁣⁣

• 1/2 cup heavy cream (sub coconut cream)⁣⁣


Instructions

Stage 1

Melt the dark chocolate. Once melted add in the sugar and Greek yogurt and mix well⁣⁣


Stage 2

Now, slowly add in 1 egg at a time, ensuring that you are mixing in between. Then add in the vanilla extract


Stage 3

In a separate bowl mix all dry ingredients then add them into your wet ingredients ⁣⁣


Stage 4

Line a 9x9 brownie pan and Bake on 350F for 30-35 minutes ⁣⁣

While brownies are in the oven heat heavy cream over medium heat until bubbles occur. Then turn the heat off and add in dark chocolate. ⁣⁣


Stage 5

Stir until all chocolate is melted and let cool for at least 10 minutes before topping brownies with dark chocolate ganache ⁣⁣
