Gluten Free Peanut Butter Oat Cups

The recipe to tasty Gluten Free Peanut Butter Oat Cups by the great baker Jessica Larit

A note from the baker:

These 4 ingredient peanut butter oat cups are bitesize and great to grab on the go. They are easy to make and are packed with protein and fibre. They truly are the perfect healthy snack!


Ingredients

• 3/4 cup peanut butter

• 1 1/4 cup gluten free rolled oats (if not GF you can use any rolled oats)

• 1/4 cup pure maple syrup

• 1 cup dark chocolate chips

• mini cupcake pan



Instructions

Stage 1

Place a small amount of water into a saucepan and then place a bowl over the top of the saucepan. (make sure your bowl is not immersed in the water) Heat your water (med-high) and on the top bowl add your peanut butter and maple syrup. Constantly stir until combined.


Once combined remove from heat and add your oats. Mix until combined.


Stage 2

Add your mixture into a lightly greased mini cupcake tin. Fill almost to the top and gently pat them down to make them even. Set aside


Stage 3

Melt your chocolate chips on the stovetop (like above) or in the microwave. Once melted, pour on top of each peanut butter oat mixture. Spread the chocolate out so it covers the top completely.


Stage 4

Freeze for 30 minutes and then let rest for 10 minutes.


Finally, remove from the cupcake pan and serve!
