Gooey Rolo Brownies

Extremely gooey rolo brownies, with a customisable recipe




Ingredients

  • 1 cup (225g) unsalted butter, melted

  • 2 cups (400g) granulated sugar

  • 1 cup (80g) unsweetened cocoa powder

  • 4 large eggs

  • 2 teaspoons vanilla extract

  • 1 cup (125g) all-purpose flour

  • ½ teaspoon salt

  • 1 cup (175g) chocolate chips

  • 2 packs (each 52g) Rolo candies




Instructions

Preheat Oven and Prepare Pan

Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.


Melt Butter

In a large microwave-safe bowl, melt the butter. Allow it to cool slightly.


Mix Wet Ingredients

Add the sugar to the melted butter and whisk well. Add the eggs and vanilla extract, and continue whisking until the mixture is well combined.


Add Dry Ingredients

Sift the cocoa powder, flour, and salt into the wet ingredients. Gently fold the mixture with a spatula just until combined. Avoid overmixing.


Add Chocolate Chips:

Fold in the chocolate chips.


Pour Half the Batter

Pour half of the brownie batter into the prepared pan, spreading it out evenly.


Add Rolos & Top with Remaining Batter

Unwrap the Rolos and distribute them evenly over the batter layer in the pan. Pour the remaining brownie batter over the Rolos, carefully spreading it to cover the candies.


Bake

Bake for 30-35 minutes. The edges should be set but the center should still be slightly gooey.


Cool & Serve

Allow the brownies to cool in the pan. They will set further as they cool. Lift the brownies out of the pan using the parchment paper overhang, cut them into squares, and serve.

Tips For Gooey Rolo Brownies

Don't Overbake

To ensure gooeyness, it's crucial not to overbake the brownies. They should still jiggle slightly in the center when you take them out of the oven.

Cool Completely

For cleaner cuts, let the brownies cool completely before slicing.

Customise

Feel free to add nuts or substitute the chocolate chips with white or dark chocolate chips for variety.
