Decadent Oreo Cheesecake Bars, a perfect blend of creamy cheesecake and the classic cookie crunch!
Ingredients
For the Crust
4 Oreo cookies, finely crushed
5 tablespoons unsalted butter, melted
For the Cheesecake Filling
16 oz (450g) cream cheese, softened
½ cup (100g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup (100g) crushed Oreo cookies
Instructions
Preheat Oven and Prepare Pan
Preheat your oven to 350°F (175°C). Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving an overhang on the sides.
Make the Crust
Mix the finely crushed Oreo cookies with melted butter. Press the mixture into the bottom of the prepared pan to form a crust. Freeze for 10 minutes.
Prepare Cheesecake Filling
Beat the cream cheese and granulated sugar together in a bowl until smooth. Add the eggs one at a time, mixing after each addition. Stir in the vanilla extract. Gently fold in the crushed Oreo cookies.
Assemble & Bake
Pour the cheesecake filling over the crust and spread evenly.
Pour and Bake
Bake for 35-40 minutes, or until the cheesecake is set and the edges are lightly browned. The center should still be slightly wobbly.
Cool and Chill
Allow the bars to cool completely at room temperature. Then refrigerate for at least 3 hours or overnight.
Serve
Lift the cheesecake out of the pan using the parchment paper overhang and cut into bars.

Cream Cheese
Ensure the cream cheese is at room temperature for a smooth filling.
Chill Time
The longer the cheesecake bars chill, the easier they will be to cut.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
