Single Serve Gigantic Cookies ( Matcha Choc Chip )

The simple recipe to gigantic Matcha cookies by the talented baker Renees Food

Ingredients

Per Cookie

• 3 tbsp (16 g) oat flour

• 1 tbsp (8g) ap flour

• 1/4 tsp baking powder, pinch of baking soda

• 1 tbsp softened butter/coconut oil

• 1 tbsp yogurt

• 1-2 tbsp maple syrup

• Butter

• Optional: 1 tbsp of a beaten egg (makes it less crumbly)

• 1/2 tsp matcha powder

• Chocolate chips



Instructions

Stage 1

Mix butter and optionally yoghurt together and then add all the ingredients into the bowl, mixing well until a soft dough is formed. If facing difficulties in forming the dough, add a little more flower to ease the process.


Stage 2

Place the dough onto a baking sheet and begin to shape into a cookie


Stage 3

Bake in the oven for 350 F / 180 C for approximately 13 minutes, baking longer for a crispier cookie and shorter for a more doughy one
