The recipe to the amazingly delicious, vegan chia chocolate chip cookies by the incredible Happyapplevegan
Ingredients
• 3/4 cup rolled oats
• 1 cup sprouted whole-wheat flour
• 1/4 cup flax meal
• 2 tablespoons chia seeds
• 1/2 teaspoon baking soda
• dash salt
• 1/4 cup liquid coconut oil
• 1/4 cup olive or canola oil
• 1/3 cup coconut sugar
• 1/3 cup brown sugar
• 1/4 cup aquafaba (drained chickpea water)
• 1 teaspoon vanilla extract
• 1 cup dark chocolate pieces or semi-sweet chocolate chips
Instructions
Stage 1
Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.
Stage 2
In a medium bowl mix together flour, baking soda, salt, flax meal and chia seeds.
Stage 3
In a small saucepan, combine oil, coconut sugar, brown sugar, aquafaba and vanilla; add to dry ingredients and stir to combine. Stir in chocolate pieces or chips.
Stage 4
Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.
