The recipe to the scrumptious, vegan and gluten free friendly millionaires shortbread by the amazing Happyapplevegan!
Ingredients
For the Crust
• 2/3 cup coconut flour
• 3 Tablespoons powdered coconut sugar*
• 1/3 cup coconut oil, solid
• 1/3 cup aquafaba (drained chickpea liquid)
For the Topping
• 1 1/2 cups large Medjool dates (about 15)
• 2/3 cup natural (peanuts or peanuts and salt only) creamy peanut butter
• 1/2 teaspoon vanilla
• 1-2 Tablespoons warm water as needed
• 10 ounces (2 cups) vegan dark chocolate chips
Instructions
Stage 1
Preheat oven to 350 F.
Prepare the crust: combine all ingredients in a food processor. Mixture should be crumbly. Press into a layer in a prepared 8-inch baking dish. Bake 12-15 minutes, or until firm and just beginning to brown.
Stage 2
Prepare the caramel: Depending on how hydrated your dates are, you may wish to soak them in water approximately 10 minutes, then drain, before preparing caramel. If they are quite moist, you can skip this step, but add 1-2 tablespoons warm water during preparation.
Combine dates, peanut butter and vanilla in a food processor and blend until smooth. Add tablespoons of warm water as needed to achieve smooth consistency. Spread caramel layer evenly over shortbread crust.
Stage 3
Gently melt dark chocolate chips in microwave or in a saucepan over low heat with a little water. Spread over caramel. Refrigerate or place in freezer until firm enough to cut into squares. Store in fridge of freezer.
